Peyton joined the University of Iowa Athletics Department in October 2024. Prior to working for Iowa, she worked as a Sports Dietitian for the minor leagues during the 2024 season. In 2023 she interned with the University of Minnesota football program and worked part-time as a clinical dietitian at Allina Health Care.

Peyton received a Bachelor's of Arts in Exercise Science in 2020 from Iowa, and completed her Master of Clinical Nutrition in 2023 from Iowa.
